Hasselback Potatoes

Ingredients
  • 4 large potatoes
  • 3 tablespoons of extra virgin olive oil
  • A handful of chives to serve, chopped
  • Butter to serve, optional
  • Salt and freshly ground black pepper to taste
Directions
  • Step 1 Heat your oven to 200c or 390f
  • Step 2 Wash the potatoes
  • Step 3 Use a sharp knife to make slices along your potato, ensuring you leave enough at the bottom to hold the potato together.
  • Step 4 Toss the potatoes in oil
  • Step 5 Place on a baking tray
  • Step 6 Cook for about 1 hour or until the potatoes are soft inside when poked with a fork
  • Step 7 Season with salt and pepper, serve with butter and chopped chives
